Prepare the tomatoes the evening before or early morning and let all the flavors marinate. Then when you’re ready to eat some chicken, grill up and you have a quick weekday meal.
What is Bruschetta Chicken?
Bruschetta in Italian is actually an antipasti that consists of grilling bread, rubbing it with garlic, and pouring olive oil and salt over it. Tomatoes and other toppings are often added, like this simple tomato topping I used on my grilled chicken. This recipe takes a classic Italian starter and turns it into a main course.
The tomatoes are the star of the show. To quote my husband: “You could serve this over a cardboard box and it would be good!” We love it in the summer when the tomatoes are ripe, serve with some crusty bread to soak up the juice if you like, or just enjoy over a large salad.

- 3rd medium ripe ripe tomatoes
- 2 small cloves of garlic, chopped
- 1/4 Cup chopped red onion
- 2 tablespoon fresh basil leaves, chopped
- 1 tablespoon extra virgin oil
- 1 tablespoon balsamic vinegar
- kosher salt and fresh pepper to taste
- 3rd ounce Part of skimmed mozzarella, diced (omit for whole 30, paleo)
- 1.25 lbs 8 wafer-thin chicken schnitzel

Combine onion, olive oil, balsamic vinegar, 1/4 teaspoon kosher salt, and pepper. Take a few minutes.

Chop the tomatoes and place in a large bowl. Season to taste with garlic, basil, onion and balsamic vinegar combination and an additional 1/8 teaspoon salt and pepper. Set aside and let rest for at least 10 minutes or overnight.

Fold in the cheese to serve.

Season the chicken with salt and fresh pepper.

Preheat the grill to medium high, clean and oil the grids to prevent them from sticking.

Grill the chicken for 2 minutes on each side, set aside on a platter, top with bruschetta and serve.
